White Wine Garlic Bacon Green Beans

Last night we certainly weren’t in the mood to shop or really cook. We has just gotten home from a St. Louis, where we had eaten like kings all weekend. So I wanted to fix something light with what we had in the kitchen. I created White Wine Garlic Bacon Green Beans. It is a slight twist on the bacon green beans that are popular at summer cook-outs. These turned out to be sweet but savory and most importantly, really easy.

Ingredients:
2 cans green beans, drained
¼ pound turkey bacon
½ cup sweet/semi-sweet white wine
4 cloves garlic
Olive oil
salt and pepper

I started by sautéing the bacon in the olive oil. Since it was turkey bacon, I tossed in some white wine because I knew that the bacon would need the liquid and it would easily take on the taste of the wine. We had visited Mount Pleasant Winery outside of St. Louis and enjoyed a bottle of wine. There was a little left of the semi-sweet white we bought. I added a little salt and let the bacon fry in the sauté pan. I opened the cans of green beans and threw them in the pan. (I think this would also be really good with fresh beans.) I used a garlic press to press the garlic right into the pan and mixed all the ingredients. I let it sauté on medium heat until the beans were warm, added a dash of salt and pepper and served in bowls. The bacon is crispy and sweet, but the green beans are soft and garlicy. Though this was our entire dinner, I really think this would be an excellent side dish with many summer favorites.
